Djondjon is Haiti’s prized black mushroom, found only in the northern regions of the island. When simmered, it releases a deep, inky black color and an earthy, savory aroma that transforms any dish. It is the essential ingredient in diri djondjon, one of Haiti’s most beloved and iconic rice dishes.
